1 can (15 oz) lite coconut milk

¼ cup chicken broth or water

2 tbsp peanut butter (or cashew butter)

1 tbsp soy sauce (or coconut aminos)

3 cloves garlic, minced

1 tbsp grated fresh ginger

1 tbsp yellow curry powder

½ tsp ground turmeric

¼ tsp cayenne pepper

Salt & black pepper, to taste

1 lb boneless, skinless chicken breast

2 medium sweet potatoes, cubed

2 carrots, sliced

1 yellow onion, diced

1 red bell pepper, sliced

1 cup frozen peas

Fresh cilantro for garnish


Instruction


1.Mix the Sauce
In your slow cooker, whisk together coconut milk, broth, peanut butter, soy sauce, garlic, and ginger.


2.Add Spices
Stir in curry powder, turmeric, cayenne, salt and pepper until smooth.

3.Add Chicken and Veggies
Put some chicken, sweet potatoes, carrots, and onion into the slow cooker. Stir to coat everything with the sauce.

4.Give time for prepair
Cover and cook on high for 3-4 hours or low for 6-7 hours until the chicken is tender.
