Sweet Potato Pancakes Recipe



Ingredients:

✅ 1 ¾ cups flour
✅ 2 teaspoons baking powder
✅ ½ teaspoon baking soda
✅ 1 ½ teaspoons cinnamon
✅ ½ teaspoon salt
✅ ¼ teaspoon nutmeg
✅ ½ teaspoon ginger
✅ 2 tablespoons brown sugar
✅ ½ cup mashed sweet potato
✅ 1 ½ cups milk
✅ 1 teaspoon vanilla extract
✅ 2 large eggs
✅ Coconut oil
✅ Maple syrup, butter, and pecans


Instruction:

1.Mix the Dry Stuff
Grab a big bowl and mix together the flour, baking powder, baking soda, cinnamon, salt, nutmeg, ginger and brown sugar.
2. Mix the Wet Stuff
In another bowl, whisk the sweet potato, milk, and vanilla. Then, add the eggs and mix until smooth.
3.Combine It All
Slowly pour the wet mixture into the dry mix. Stir gently .don’t overmix!
4. Heat the Pan
Put a pan on medium heat and add a little coconut oil. Let it get hot before adding the batter.
5. Cook the Pancakes
Scoop about ⅓ cup of batter into the pan for each pancake. Let them cook until you see bubbles on top (about 2-3 minutes). Then, flip and cook for another 2-4 minutes until look like golden brown.
